Cooking with gas: Pancakes

Some mornings call for something a little special. Pancakes are the perfect choice, simple to make, endlessly customisable, and guaranteed to make the kitchen smell amazing. Best of all, they’re quick to cook on gas, with quick, controllable heat that gives you stack-worthy golden circles. 

You don’t need an excuse, but if you’re looking for one, pancakes make the ideal treat for birthdays, anniversaries, or special days like Mother’s Day or Father’s Day. We’ve got the fluffiest pancake recipe below, but fair warning, one bite and the family could have you flipping pancakes every weekend. 

Alison Holst’s American Pancakes

Makes: About 8 pancakes 

Ingredients: 

  • 50g butter, melted 
  • 2 eggs 
  • 1 cup milk 
  • 1½ cups flour 
  • 1 tsp baking powder
  • 3 Tbsp sugar 


Method: 

  1. Melt the butter in a saucepan or microwave-safe bowl. In a medium mixing bowl whisk the eggs and milk until combined, then add the melted butter. 

  2. Add the flour, baking powder, and sugar to a large bowl, then pour in the wet mixture. 

  3. Lightly whisk until the batter is smooth and just combined. Don’t overmix, or the pancakes will be tough. If the batter feels too thick, add 2–3 tablespoons of extra milk to reach your preferred consistency. 

  4. Lightly grease a frying pan with butter and heat it over medium-low on your gas hob. 

  5. Pour in the batter (a ladle works well for even portions). 

  6. Cook until the edges start to look set and bubbles form on the surface, then flip.

  7. Cook the second side until golden and the centre springs back when lightly pressed. 


Make it your own 

The joy of pancakes is in the toppings. Go classic with lemon juice and sugar, layer on fresh berries and yoghurt, or make it indulgent with maple syrup and crispy bacon. Ice cream also goes down a treat. Let everyone build their own plate for a fun, family breakfast.
